Chinese stir-fried vegetables

Background
This a very easy and tasty dish that fits well in a relaxed Chinese menu. It's made with washed & ready to cook mixed vegetables, so it only takes 5 minutes to stir-fry.
Ingredients
- 1 Tbsp groundnut oil
- 2 cm ginger (peeled and grated)
- 2 cloves garlic (minced)
- 3 spring onions (chopped)
- ½ chilli pepper (chopped)
- 1 Tbsp Oyster souce
- 1tsp rice vinegar
- 1 tsp soy sauce
- 1bag of mixed stir-fry vegetables (approx 300g)
Instructions
- Heat the wok until smoking hot then add the oil.
- When hot, add the ginger, garlic, spring onions and chilli. Stir-fry for 20 seconds.
- Add mixed vegetables and sauces, then cook for 3-5 minutes, constantly stirring.
- It's ready when the vegetables are tender but still crunchy. Serve immediately .
