Chipolatas, pepper and fennel bake

Background
Sausages are loved by most kids and adults so they are perfect for family meals. This chipolatas, pepper and fennel bake is a simple one-dish recipe, everything is cooked in one tin in the oven. You can serve it with a mash, rice, salad or just bread.
Ingredients
- 1 bulb of fennel
- 12 chipolatas (with herbs)
- ½ tsp fennel seeds
- 1 onion
- 1 red or yellow bell pepper
- 2 Tbsp olive oil
Instructions
- Preheat the oven to 180°C.
- Cut the fennel and onion into wedges. Cut the pepper into thick slices or chunks. Scatter these around a large baking tray. Add the fennel seeds.
- Drizzle with the olive oil, and coat the vegetables well - either with your hands or using a silicon brush.
- Lay the sausages between the vegetables.
- Roast in the oven for 20-25 minutes, until the vegetables are soft and the chipolatas are golden, turning them a couple times during cooking.
- Serve warm.
Tips
You can use or add other vegetables if you like - for example courgette, parsnip, aubergine work well too.© 2024 Copyright CookTogether
