Chocolate chip oat cookies

Background
These cookies are really lovely with a cup of tea. They are not only quick and easy to make, but they can be made dairy-free if appropriate margarine & chocolate drops are used. Stored in an airtight container they remain fresh for at least a week!
Ingredients
- 1 cup whole-wheat flour
- 1 cup oats
- 1 tsp baking powder
- 1 pinch of salt
- ½ ts ground cinnamon
- 1 egg (beaten)
- ½ cup soft butter (or margarine )
- ½ cup light soft cane sugar
- ¼ cup milk (or oat-milk)
- ½ cup dark chocolate chips
Instructions
- Preheat oven to 180°C/350/f/Gas Mark 4. Line a large baking tray with baking paper.
- Mix the flour, oats, baking powder, salt, cinnamon in a large bowl.
- Cream the butter & sugar, then add eggs and milk, beat well.
- Combine the two mixtures. Add the chocolate bits and mix well.
- Drop spoonfuls of the batter onto the tray, leaving about 5 cm space between them, then squash them down a bit.
- Bake for 10-15 minutes, until golden brown.
- Allow the cookies to cool for a couple of minutes then move them to a wire rack to cool completely.
Tips
- Instead of cinnamon you can add 1 tsp vanilla extract.
- You can use white or milk chocolate chips too, if dairy is not an issue for you.
