Chocolate porridge with stewed strawberries
Background
If you find every-day porridge a bit boring, you can easily jazz it up with fruits and nuts. This chocolate porridge with stewed strawberries is ready within 15 minutes -it’s delicious, yummy, vegan and healthy. Make sure you use good quality cocoa powder! If dairy is not an issue for you, or you’re not vegan, you can use normal milk .
Ingredients
- 1 cup porridge oats gluten-free, if needed)
- 3 cups oat milk (or other plant-based milk)
- 1 Tbsp cocoa powder
- 100g strawberries
- 1 Tbsp date syrup or honey
- 1 tsp vanilla extract
- 2 Tbsp chopped nuts
Instructions
- Put the oats and milk in a pan, bring to the boil, then add the cocoa powder and gently simmer for 10 minutes, stirring occasionally. When the porridge has thickened to your liking, put a lid on, turn off the heat and rest.
- Meanwhile, cut the strawberries in half and put them in a pan with the vanilla and a drop of water.
- Turn on the heat and gently cook them for about 5 minutes or until they release their jus. Add the honey, turn up the heat and caramelize them - leaving a sticky liquid around them.
- Spoon the porridge into two bowls, then add the stewed strawberries, together with the jus.
- Scatter some chopped nuts on top, then serve.
