Chole (chickpeas curry)

Background
Chole (chickpeas curry) is a great favourite in India. This dish is made with the larger and lighter coloured variety of chickpea. In India, it's often paired with fried bread called bhature. It's a very popular snack or street food and people love it all over the sub-continent.
Ingredients
- 1 cup chole or chickpea soaked overnight
- 4 Tbsp butter
- 1 bay leaf
- 1 inch cinnamon stick
- ½ tsp cumin seeds
- 1 onion finely chopped
- 1 tsp ginger-garlic paste
- 2 tomatoes finely chopped
- 1 Tbsp chilli powder
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp cumin powder
- ¾ tsp aamchur powder or dry-mango powder
- salt to taste
- ½ tsp garam masala
- 2 cups water
- 2 tsp coriander leaves finely chopped
Instructions
- In a pressure cooker, on medium flame, heat the butter. Please make sure not to burn it.
- To the butter, add and sauté bay leaf, cinnamon stick and cumin seeds till they turn aromatic.
- Add tomatoes and sauté till they start releasing the oil.
- Add chilli powder, turmeric, coriander powder, cumin powder, dry mango powder, garam masala and salt. Saute for a minute.
- Add soaked chickpea and 2 cups of water. Mix well.
- Pressure cook until 7-8 whistles on medium flame.
- Once done, garnish with coriander leaves.
- Serve hot with poori or roti or bhature.
