Chorizo and couscous stuffed marrow
Background
Marrow is an underrated vegetable. Itβs cheap, healthy and versatile! This Chorizo and couscous stuffed marrow is an easy, hearty, delicious Mediterranean dish that can be on the dining table in just half an hour. Perfect dish for mid-week suppers! The stuffing can be pre-cooked, (even the day before) so the baking only takes 20 minutes.
Ingredients
- 1 large marrow
- 100g couscous
- 1 lemon, juiced
- 1 Tbsp olive oil
- 1 red onion
- 100g chorizo cooking sausage
- 1 red pepper
- 2 ripe tomatoes
- 1 Tbsp chopped parsley
- 1 Tbsp chopped mint
- 1 Tbsp chopped coriander
- Salt& pepper
Instructions
- Preheat the oven to 180Β°C.
- Cut the marrow in half lengthwise, scrape out the seeds and wispy hairs, then peel off the skin.
- Place the marrow halves in a baking dish.
- Scatter the couscous in a bowl, pour over the lemon juice and enough hot water to cover it. Cover, let it rest for five minutes.
- Meanwhile, peel and thinly slice the onion. Cut the peppers into thin strips, remove the seeds of tomatoes and cut the flesh into small cubes. Coarsely chop the chorizo sausage.
- Heat the oil in a frying pan, lightly soften the onion and add the chorizo pieces.
- When the sausage has browned and released its fat and, stir in the couscous, tomato pieces, pepper strips and chopped herbs. Mix well, then season with salt and pepper. Turn off the heat.
- Fill the marrow halves with the mixture.
- Bake for about 20 minutes or so, until the marrow flesh is tender.
