Chorizo and tomato omelette
Background
One of the must-have ingredients in my fridge is Chorizo - as a few bits of this Spanish paprika sausage can really jazz up meals or likewise side dishes and salads. This Chorizo and tomato omelette is a perfect example - in just 10 minutes you can create a yummy and very filling meal. You can add some Spanish-style cheese if you like and use spicy Chorizo, if preferred. Serve it with flat bread or wholesome buns.
Ingredients
- 4 large eggs
- 50g cooking chorizo (can be spicy)
- 2 tomatoes, chopped (or 6 cherry tomatoes halved)
- 1 handful of rocket leaves
- 2 Tbsp grated Manchego or similar cheese (optional)
- Salt and pepper
Instructions
- Lightly whisk the eggs in a small bowl with a pinch salt and ground pepper.
- Roughly chop the Chorizo.
- Put the Chorizo pieces in a frying pan and gently heat over medium-low heat. Stir occasionally until the sausage has released its fat. Add the tomatoes and cook for a couple of minutes until tender.
- Pour in the egg mixture, letting it spread out evenly.
- Put a lid on and cook for about 8 minutes over low heat, until the surface of the omelette is solid. Add thee grated cheese, if used, then the rocket and fold in half.
- Cook for another minute then slide it to a plate.
- Cut the omelette in half and serve.
