Chorizo and courgette frittata

Background
If you like Spanish tortilla as tapas you’ll love this Chorizo and courgette frittata! It’s super easy to make - ready in 10 minutes. Perfect nibble to accompany a glass or two Cava or serve it with a salad for a quick and easy lunch/supper. Also, it’s ideal for picnics and trips.
Ingredients
- 4 eggs
- 100g cooking chorizo
- 1 courgette
- Chopped parsley
Instructions
- Lightly whisk the eggs. Cut the chorizo into small chunks and put these in a frying pan.
- Gently heat the pan to allow the chorizo to release its fat.
- Meanwhile coarsely grate the courgette into the egg mixture. Add the parsley and pour over the fried chorizo, letting the mixture spread out evenly.
- Put a lid on , turn down the temperature and cook for about 6 minutes, until the surface is set. If you like it brown, put it under the grill for a minute (you can scatter some grated cheese or feta on the top before grilling ).
- Let it cool slightly in the pan, then cut it into wedges or squares.
- Serve at room temperature.
