Christmas chutney

Background
The following Christmas chutney is a lovely festive condiment, ideal as a Christmas gift. It's very simple to make and can be used in various ways - with nibbles, cheese, cold cuts of meat and so on. Try to make this chutney at least two weeks before using it, to let flavours properly infuse.
Ingredients
- 750g green apple
- 1 medium onion
- 500g cranberries
- 150g pitted dates
- 2 tangerines or clementines
- 350g light muscovado sugar
- ½ tsp ground cloves
- 1½ tsp ground cinnamon
- ¼ tsp cayenne pepper
- 500 ml white wine vinegar
Instructions
- Peel, core and the dice the apples, peel & roughly chop the onion. Zest the mandarins, squeeze their juice out then chop the flesh coarsely. Put aside the juice.
- Put everything into a large, heavy-based pan, bring to the boil, cover and simmer gently at a very low temperature for about 1 hour, until you get a thick, sticky jam.
- Spoon the chutney into cold, sterilized jars and seal well.
- Store in a cool place, and then in the fridge after opening.
