Cider braised red cabbage and apple

Background
This cider braised red cabbage and apple looks and smells lovely on a festive dining table! It goes well with roasted poultry ( turkey, duck, goose, chicken) or roasted pork, ham and most games. Perfect side dish during the winter festivities!
Ingredients
- 1 large Bramley apple
- 1 medium red cabbage
- 2 onions
- 100 ml apple cider
- 1 Tbsp cider vinegar
- 50g muscovado sugar
- 1 pinch of salt
- 1 star anise
- 1 cinnamon stick
- 5 cloves
Instructions
- Peel, core and roughly chop the apple. Finely slice the onion.
- Thinly slice or shred the cabbage.
- Put all ingredients in a large, heavy-based pot and gently simmer for about 60-80 minutes, until the cabbage is soft. Stir occasionally.
- Taste, add some honey if itβs not sweet enough.
