Coconut and lime oat cookies

Background
These coconut and lime oat cookies are delicate little nibbles that go so well with afternoon tea or midmorning coffee! Or take them with you on trips and picnics.
Ingredients
- 1 cup coconut flour
- 1 cup gluten-free oats
- 2 cups almond or coconut milk ( fresh)
- 2 eggs
- Β½ cup coconut or muscovado sugar
- Β½ cup ground almond
- 1 tsp baking powder
- Zest of 1 lime
- Juice of Β½ lime
Instructions
- Preheat the oven to 180Β°C. Line a baking tray with parchment paper.
- Mix the coconut flour, oats add coconut milk together. If time allows, let it rest for 10 minutes.
- Lightly whisk the eggs, then add to the oat mixture together with the sugar, baking powder, ground almond, lime juice & zest. Add more milk, if the batter is too thick. You should get a soft, malleable batter.
- Make equal sized balls from the batter, then flatten them lightly between your palms. (It's a bit sticky, don't worry!)
- Bake for about 20 minutes until golden, then let them cool on a wire-rack.
