Coconut and pineapple muffins

Background
These coconut and pineapple muffins are lovely for kids' parties, picnics or weekend snacks. They're very easy to make, so get your kidsย to help!
Ingredients
- 1 cup whole-wheat flour
- 1 cup rolled oats
- 1 tsp baking powder
- ยฝ tsp baking soda
- ยฝ cup unrefined cane sugar
- ยฝ cup desiccated coconut
- 1 small tin of pineapple
- 1 cup buttermilk or coconut milk
- โ cup oil
- 1 egg
- ยฝ cup pecan nuts, chopped
Instructions
- Preheat the oven to 180ยฐC.
- In a large bowl mix the flour, baking powder, baking soda, sugar, coconut and oats.
- Lightly beat the egg, then mix with the milk and oil. Add this to the flour mixture, stir well, then fold in the nuts.
- Spoon the batter into silicon muffin cases or a lined muffin tin.
- Bake for about 20 minutes until golden brown.
- Transfer the muffins onto a wire rack to cool.
