
Background
This simple coleslaw with apple salad goes well with pork burgers or slow-roast pork in a bun. So it's perfect for parties, picnics and barbecues.
Ingredients
- 1 large green apple
- 2 Tbsp lemon juice (freshly squeezed)
- 4 Tbsp mayonnaise
- 4 Tbsp Greek yogurt
- 1 tsp Dijon mustard
- 1 tsp honey
- 200g white cabbage
- 150g grated carrot
- 2 sticks of celery
- 1 small red onion
Instructions
- Wash & core the apple, then cut into thin slices. Drizzle with the lemon juice.
- Mix the mayonnaise with the yoghurt, mustard, honey, salt and pepper.
- Thinly slice or shred the cabbage and roughly grate the carrots. Chop the onion, thinly slice the celery stalks.
- Toss the vegetables in a large serving bowl with the mayonnaise dressing. Gently fold in the apple slices.
