Background

This simple coleslaw with apple salad goes well with pork burgers or slow-roast pork in a bun. So it's perfect for parties, picnics and barbecues.

Ingredients

1 large green apple
2 Tbsp lemon juice (freshly squeezed)
4 Tbsp mayonnaise
4 Tbsp Greek yogurt
1 tsp Dijon mustard
1 tsp honey
200g white cabbage
150g grated carrot
2 sticks of celery
1 small red onion

Instructions

Wash & core the apple, then cut into thin slices. Drizzle with the lemon juice.
Mix the mayonnaise with the yoghurt, mustard, honey, salt and pepper.
Thinly slice or shred the cabbage and roughly grate the carrots. Chop the onion, thinly slice the celery stalks.
Toss the vegetables in a large serving bowl with the mayonnaise dressing. Gently fold in the apple slices.
