Courgette & feta frittata

Background
This courgette & feta frittata is a quick and easy meal for brunch or a weekday supper. Serve it with crusty bread and a leafy salad.
Ingredients
- 4 eggs
- 1 Tbsp grated Parmesan
- 1 small courgette
- 1 small handful of olives (pitted)
- Β½ tsp dried Italian herbs (or oregano)
- 1 pinch of dried chilli flakes (optional)
- 100g feta cheese
- salt and pepper
Instructions
- Preheat the grill
- Beat the eggs with fork in a bowl, add the grated parmesan and season
- Slice the courgette into thin rings
- Heat the oil in a frying pan and sautΓ© the courgette for a minute or so
- Pour in the egg, let it spread out evenly, then turn to low heat and cook for a few minutes.
- Cut the feta into small cubes.
- When the omelette starts to set around the edge, but is still wet in the middle, add the olives, feta and herbs
- Put the pan under the grill for about 5 minutes, until the egg is cooked through and the cheese is golden brown.
- Cut into wedges, serve.
Tips
- Instead of dried herbs, you can use fresh herbs, for example parsley or basil.
- Make sure the frying pan you use has a suitable handle for oven use.
