Courgette omelette with feta
Background
Omelettes and frittatas are so easy to make and you can use up all sorts of leftovers for them. This courgette omelette with feta is ready within 5 minutes - it’s healthy, yummy, gluten-free, low-fat and low-carb. Serve it with a salad and /or crusty bread. You can add a slice of cured/roasted ham or salami just before folding the omelette in half, if you want a meaty version.
Ingredients
- ½ courgette
- 2 large eggs
- ½ tsp grated garlic
- 2 spring onions
- 3 Tbsp crumbled feta
- Rocket and spinach leaves
Instructions
- Wisk the eggs in a small bowl with two pinches of salt.
- Grate the courgette with a cheese grater, then mix this with the eggs together with the garlic.
- Het a spoonful of oil in a pancake pan and pour in the egg mixture, letting it spread out evenly.
- Thinly slice the spring onions and scatter these on top of the omelette, then crumble the feta over it.
- When the omelette has almost set, add the spinach or rocket leaves and fold the omelette in half.
- Cook for another minute then turn over and cook for a few more seconds before transferring it onto a plate.
- Cut it half and serve warm.
