Background
Tzatziki is normally made with cucumber, but if you have some courgette to use up, why don't you try something different? This courgette tzatziki is ready in just 5 minutes - perfect sauce for greek-style meatballs, falafels, burgers, wraps or as a dip with cruditΓ©s.
Ingredients
- Β½ small courgette
- 1 garlic clove, minced
- 1 handful of mint
- 1 tsp olive oil
- 5-6 Tbsp Greek yoghurt
- juice of 1 lemon
- Pinch of salt
Instructions
- Finely grate the courgette.
- Finely chop the mint.
- Mix everything together in a bowl - but only add juice of Β½ lemon, then more if needed.
- Garnish with mint leaves and a pinch of paprika or ground pepper.
