Background
For summer picnics, trips, barbecues and parties one of the easiest salad to make is coleslaw. This creamy chicory and celery slaw is ready within 10 minutes. Itβs made with Greek yoghurt so it goes particularly well with grilled fish and meat, tucked into flatbread. You can add extras to the salad - depending on your mains and the season. I love it with chopped walnuts during the winter months, while I add some chopped spring onion during the summer.
Ingredients
- 1 head of chicory
- 2 sticks of celery
- 1 clove of garlic (pressed)
- 3 Tbsp Greek yogurt (or sour cream)
- 1 Tbsp olive oil
- Squeeze of lemon juice
- Optional extras: 6 pieces of walnut kernels or1 bunch of spring onions or 1 apple
- Salt & pepper
Instructions
- Thinly slice the chicory and celery stalks.
- Mix the oil, yogurt and garlic. Season to taste.
- Add your chosen (optional) extra ingredient to the chopped vegetables. Toss well.
- Keep chilled until serving.
