Background
If you need a quick and easy recipe for BBQ or picnic or for the buffet table at a party - this creamy red cabbage and radish salad will be perfect. You can use plant-based “cream” mixed with lemon juice or apple cider vinegar for a vegan version.
Ingredients
- ½ red cabbage
- 6 radishes
- 6 spring onions
- 1 tsp caraway seeds
- 3 Tbsp soured cream or crème fraîche
- 2 tsp olive oil
- 1 clove of garlic, minced
- Salt & pepper
- Mint leaves to garnish
Instructions
- Shred or thinly slice the cabbage and scatter in a mixing bowl. Cut the radishes into thin wedges, the spring onions into thin slices. Add these to the cabbage.
- Mix the sour cream with the oil and garlic and pour over the salad. Add the caraway seeds and season with salt and pepper.
- Mix well, then taste.
- You might need to add more dressing or some lemon juice/cider vinegar.
- Rest for at least 15 minutes, before serving.
- Garnish with mint leaves.
