Creamy red cabbage and radish salad

Background

If you need a quick and easy recipe for BBQ or picnic or for the buffet table at a party - this creamy red cabbage and radish salad will be perfect. You can use plant-based “cream” mixed with lemon juice or apple cider vinegar for a vegan version.

Ingredients

½ red cabbage
6 radishes
6 spring onions
1 tsp caraway seeds
3 Tbsp soured cream or crème fraîche
2 tsp olive oil
1 clove of garlic, minced
Salt & pepper
Mint leaves to garnish

Instructions

Shred or thinly slice the cabbage and scatter in a mixing bowl. Cut the radishes into thin wedges, the spring onions into thin slices. Add these to the cabbage.
Mix the sour cream with the oil and garlic and pour over the salad. Add the caraway seeds and season with salt and pepper.
Mix well, then taste.
You might need to add more dressing or some lemon juice/cider vinegar.
Rest for at least 15 minutes, before serving.
Garnish with mint leaves.
