Crispy paprika chickpeas
Background
If you’re after a healthy, vegan, gluten-free snack that’s easy to make, try these crispy paprika chickpeas. The preparation only takes only a couple of minutes, then the tray is ready to go in the oven. I usually make crispy chickpeas when the oven is on already, baking a cake or roasting a joint. Keep the crispy chickpeas in an airtight container and serve them at drinks parties, or snack on them during the day. Don’t use cayenne if you don’t want them to be really spicy - try adding some garlic powder or cumin powder instead.
Ingredients
- 1 tin chickpeas, drained
- 1 tsp smoked paprika
- ½ tsp spicy paprika or cayenne pepper (optional)
- Oil spray
- Salt&pepper
Instructions
- Preheat the oven to 180˚C.
- In a mixing bowl, toss the chickpeas with the paprika and season with salt & pepper until they are well coated..
- Transfer the chickpeas to the baking sheet and spray with olive oil.
- Bake for approximately 35-45 minutes until the chickpeas are golden and crispy, shaking halfway through cooking.
- Leave them to cool, then store them in an airtight container.
