Crunchy edamame salad

Background
This crunchy edamame salad goes well with grilled meat, fish and veggies. Alternatively, add it to your lunch box, take it to picnics & trips, or serve them at parties on a buffet table etc.
Ingredients
- 150g edamame beans
- 1 handful of radish
- 5 cm piece cucumber
- Β½ red onion
- Β½ yellow pepper
- 1 clove of garlic, minced
- Salt& pepper
- 1 Tbsp olive oil
- 2 Tbsp balsamic vinegar
Instructions
- Steam or blanch the edamame beans, then rinse under cold water and put them in a bowl.
- Clean the radish, then cut them in half or wedges. Add these to the beans.
- Thinly slice the onion and pepper, add these to the salad.
- Add the garlic, oil and balsamic, then toss well.
- Let it rest for 5 minutes, then serve.
