Background
If you want a slaw with a bit of an edge, do give this crunchy slaw with horseradish a try! It’s healthy, easy to make and goes superbly with barbecued or grilled fish/meat. It can be taken to picnics and trips too or is also perfect for your lunchbox!
Ingredients
- 150g red cabbage
- 100g celeriac
- 1 small carrot
- 1 small red onion
- 1 small beetroot
- 1 handful of parsley leaves, finely chopped
- 1 tsp Dijon mustard
- 1 Tbsp apple cider vinegar
- 2 Tbsp pumpkin seeds
- 2 Tbsp olive oil
- 1 knob of fresh horseradish
Instructions
- Finely shred the cabbage. Finely chop the onion. Peel and coarsely grate the carrot, beet & celeriac.
- Put all the prepared vegetables into a large bowl. Add the chopped parsley.
- Mix the dressing in a small bowl, season with salt and peper to taste and drizzle over the salad. Grate some fresh horseradish on top (to your taste).
- Toss well, taste and adjust the seasoning/spiciness/ sweetness to your liking.
