Duck salad with honey and soy dressing
Background
I made this duck salad with honey and soy dressing using leftover roasted duck. If you want to make it from scratch, jut bake or grill 2 duck breast fillets (with skin on) until crispy and rest, then follow the recipe. Itβs perfect for special lunches to celebrate anniversaries, Motherβs day, Valentineβs day etc.
Ingredients
- 1 cup of shredded/roasted/grilled duck meat
- 1 bag of bistro salad (with rocket leaves and shredded beetroot)
- 1 handful of cherry tomatoes, halved
- 1 bunchΒ spring onion, sliced diagonally
- Dressing:
- Β½ tsp grated garlic
- Β½ tsp grated ginger
- 1 Tbsp soy sauce
- 1 Tbsp honey (orange blossom)
- 1 Tbsp fresh orange juice
Instructions
- Toss together the salad. Shred the duck into bite-sized pieces, then add these to the salad.
- Mix the dressing, then season with freshly ground pepper. Taste and adjust it to your liking.
- Drizzle the dressing over the salad, then serve.
