Background

I made this duck salad with honey and soy dressing using leftover roasted duck. If you want to make it from scratch, jut bake or grill 2 duck breast fillets (with skin on) until crispy and rest, then follow the recipe. It’s perfect for special lunches to celebrate anniversaries, Mother’s day, Valentine’s day etc.

Ingredients

1 cup of shredded/roasted/grilled duck meat
1 bag of bistro salad (with rocket leaves and shredded beetroot)
1 handful of cherry tomatoes, halved
1 bunch spring onion, sliced diagonally
Dressing:
½ tsp grated garlic
½ tsp grated ginger
1 Tbsp soy sauce
1 Tbsp honey (orange blossom)
1 Tbsp fresh orange juice

Instructions

Toss together the salad. Shred the duck into bite-sized pieces, then add these to the salad.
Mix the dressing, then season with freshly ground pepper. Taste and adjust it to your liking.
Drizzle the dressing over the salad, then serve.
