Easy buckwheat blini recipe
Background
Traditional Russian blinis are made with yeast-fermented batter that is left to rise, then diluted with milk, sour cream or water. This easy blini recipe is ready in no time, and itβs yeast-free, gluten-free and can be dairy-free too if oat/almond milk is used. You can serve blinis like pancakes for breakfast (with jam, honey, maple syrup, fruit compote and so on), or as nibbles with various toppings (such as smoked salmon, paté and of course caviar). Alternatively, substitute bread with these healthy blinis when you eat soups and stews. I made these ones on the photo for my kids as healthy snacks.
Ingredients
- 1 cup buckwheat flour
- 1 cup of milk (or almond/oat milk)
- 1 tsp baking powder
- 1 large egg (or 2 small)
- 1 Tbsp vegetable oil
- Little soda water
Instructions
- Mix the ingredients in a blender. The batter should be thick but pourable - thicker than a normal pancake batter. If it is too thick, add some soda water.
- Lightly oil a pancake pan and add few small ladleful of batter, letting them spread into circular shapes. Alternatively pour the batter into silicon pancake moulds ( ike on the picture).
- When the surface has set, flip them over and cook for a minute or so. Transfer them to a plate.
- Serve warm or at room temperature.
