Easy chorizo and fish stew
Background
This easy chorizo and fish stew is a popular quick and easy Spanish dish, ideal for lunch or supper. They normally make it with their own preserved tomato sauce ( here is the recipe for a really tasty one) β but you can use shop-bought, jarred or tinned sauces too. Serve it with fresh crusty bread, steamed rice or mashed potatoes.
Ingredients
- 500ml spicy tomato sauce
- 1 handful of thyme leaves
- 200g grilled bell pepper (from jar)
- 200g cooking chorizo
- 300g white fish fillets (eg cod, haddock)
Instructions
- Cut the chorizo into small cubes, slice the pepper into strips, and cut the fish into small pieces.
- Put the chorizo in a pan and fry them overt medium temperature until it has released its fat.
- Add the tomato sauce, pepper strips and thyme then bring to a boil.
- Add the fish and cook for 10 minutes under cover.
- Serve warm.
