Background

This easy chorizo and fish stew is a popular quick and easy Spanish dish, ideal for lunch or supper. They normally make it with their own preserved tomato sauce ( here is the recipe for a really tasty one) – but you can use shop-bought, jarred or tinned sauces too. Serve it with fresh crusty bread, steamed rice or mashed potatoes.

Ingredients

500ml spicy tomato sauce
1 handful of thyme leaves
200g grilled bell pepper (from jar)
200g cooking chorizo
300g white fish fillets (eg cod, haddock)

Instructions

Cut the chorizo into small cubes, slice the pepper into strips, and cut the fish into small pieces.
Put the chorizo in a pan and fry them overt medium temperature until it has released its fat.
Add the tomato sauce, pepper strips and thyme then bring to a boil.
Add the fish and cook for 10 minutes under cover.
Serve warm.
