Egg & prosciutto in a bagel hole
Background
Egg in a bagel hole is one of my favourite breakfast meals. It’s so easy to make – can be cooked ion a pan or in the oven. This Egg & prosciutto in a bagel hole is taking the dish to a higher level - it’s filling, yummy yet still easy to make. Ideal for a special breakfast or brunch. I made it using gluten-free bagel, but you can make it with normal bagels or special flavoured ones, such as cinnamon or caramelised onion bagels.
Ingredients
- 1 bagel
- 2 slices of prosciutto
- 2 sundried tomatoes or grilled pepper slices in oil (from a jar), flattened
- 1 tsp pesto (optional)
- 2 eggs
Instructions
- Preheat the oven to 180°C.
- Cut the bagel in half. Using a knife or cookie cutter make the hole a bit bigger so that cracked egg can easily fit in there.
- Lightly grease the cut side of the bagels with pesto or dairy-free spread, then lay the prosciutto on top, covering the hole. Push the prosciutto using the sundried tomatoes, creating a little nest for the egg.
- Move the bagel nests onto a greased or lined baking tray, then crack the eggs into the holes. Season with pepper, then bake for 10-15 minutes depending on how well-done you like your fried egg.
- Serve warm with a crunchy salad.
