Elderflower, coconut and banana oat cookies
Background
These elderflower, coconut and banana oat cookies are a variation on my healthy oat and banana cookies but they are also gluten-free, dairy-free, egg-free and fat-free. There is some sugar in these, which comes from home-made, reduced-sugar elderflower cordial. So these cookies are still more healthy than most oat-based cereal bars you buy in the shops, and yet super easy to make.
Ingredients
- 2 bananas
- 1 cup rolled oats
- 2 tbsp elderflower cordial
- 2 tbsp desiccated coconut
- Zest of 1 lemon
- For the glaze:
- 2 tbsp elderflower cordial
- Juice of 1 lemon
Instructions
- Mash the bananas with a fork or blend them in a blender.
- Add enough oats and the other ingredients to create a malleable dough. Let it rest until the oven warms up.
- Turn the oven on to 180Β°C. Line a baking tray with parchment paper.
- Make equal sized balls (8-10) from the mixture and flatten these slightly between your palms. Put these on the baking tray and bake for about 15-20 minutes until the edge turns golden brown.
- Meanwhile, mix the cordial with the lemon juice in a pan and heat it up. Let it bubble until it gets syrupy.
- When the cookies are done, transfer them to a wire rack and brush with the glaze.
- Let them cool before serving.
