Feta & red pepper omelette

Background
This lovely, quick & easy omelette is just right for lunch or brunch at the weekend. Serve it with fresh bread and a green salad.
Ingredients
- 2 large eggs
- 1 Tbsp chopped parsley
- 50g grilled red pepper or jarred roast peppers
- 30g feta cheese
- 1 tsp of olive oil or 1 knob of butter
Instructions
- Beat the eggs lightly with a fork. Stir in the parsley and season to taste with salt and pepper.
- Cut the red pepper into thin strips .
- Heat the oil or butter in a small frying pan, then set the hob to a low temperature.
- Pour in the egg, then tilt the pan around to allow the eggs spread out evenly.
- When the surface of the egg is jelly-like, add the pepper and crumble the feta on top.
- Fold the omelette in half and cook for a minute. If you like it well cooked flip it and cook for another minute.
- Serve warm.
