Fig, prosciutto and gorgonzola with balsamic & honey dressing

Background
This is a classic, Italian dish that's ready under 10 minutes. The fig, prosciutto and Gorgonzola with balsamic & honey dressing can be served as a starter, snack or party nibbles. Serve it with some toasted ciabatta or baguette.
Ingredients
- 1 Tbsp honey
- 4 Tbsp balsamic vinegar
- 6 ripe figs
- about 3 slices of prosciutto
- Gorgonzola cheese ( about 100g)
Instructions
- Spoon the balsamic vinegar and honey into a pan, bring to the boil and reduce it to a thick sauce.
- Meanwhile, cut figs into wedges and tear the prosciutto into thin strips.
- Arrange the figs on a plate, scatter the prosciutto around them and crumble some cheese on top. Alternatively, make little parcels by wrapping a piece of fig & cheese with the ham.
- Season the sauce with salt and pepper, then drizzle it over the salad.
