Garlic Vegetable Stir Fry

Background
Like the Ginger Spinach recipe, this Garlic Vegetable Stir Fry makes a great side dish within a Chinese lunch or dinner. Again it's very quick and easy to prepare and cook - yet another wonderful wok creation!
Ingredients
- 1Β½ Tbsp peanut (groundnut) oil
- 1 bulb garlic finely chopped
- 200g trimmed green beans
- 200g tenderstem broccoli
- 200g asparagus
- 100g beansprouts
- salt & pepper to taste
- 1 tsp demerara sugar
- 4 Tbsp Shaoxing rice wine
Instructions
- Halve the green veg into about 7 cm long pieces
- Put the oil Into a hot wok and, when it's smoking, add the garlic. Stir-fry for half a minute or so.
- Add all the other ingredients and, still over a high heat, stir-fry for a couple more minutes.
- Turn down the heat, cover the wok and allow to simmer for about 5 minutes to cook through.
- Uncover the wok, turn up the heat and stir-fry to evaporate any remaining liquid. Serve in a warmed bowl.
Tips
If you don't have any Shaoxing wine dry sherry works well too.© 2024 Copyright CookTogether
