Ginger and oat cookies with kiwi

Background
These ginger and oat cookies with kiwi and coconut are vegan, gluten-free, sugar-free yet yummy. They don’t need extra sugar or added fat as the ingredients provide enough moisture and sweetness. So they are healthy snacks that can be enjoyed during the day or for breakfast with tea/coffee.
Ingredients
- 2 ripe bananas
- 1 cup rolled oats
- 1 tsp ginger powder
- 2 kiwi
- 2 Tbsp desiccated coconut
- 2 Tbsp coconut cream
Instructions
- Preheat the oven to 180°C and line a baking tray with parchment paper.
- In a bowl, mash the bananas with a fork.
- Add the oats, ginger, desiccated coconut and cream.
- Mix well and add more oats, if the mixture is too sticky and soft.
- Let the mixture rest for a few minutes, while you peel and chop the kiwis.
- Gently mix the kiwis with the oats.
- Using your hands, make equal-sized balls, then press these between your palms.
- Place the cookies on the lined baking tray.
- Bake the cookies in the oven for approx. 15-20 minutes until they’re golden.
- Let them cool on a wire rack then serve.
