Ginger oat cookies
Background
As I mentioned before, I make oat & banana cookies regularly, which I snack on during the week. In order not to get bored with them I add different ingredients to the basic recipe (see healthy oat and banana cookies) - seeds, nuts, dried fruits, desiccated coconuts and so on. The result is always sugar-free, dairy-free, gluten-free, egg-free, so healthy and vegan. Most importantly really yummy and super easy to make. These ginger oat cookies are for those who love a bit of spice! Perfect with morning coffee or afternoon tea.
Ingredients
- 2 ripe bananas
- Β½ tsp ground ginger
- Β½ tsp cinnamon
- 1 tsp vanilla extract
- 1 cup rolled oats
- 2 Tbsp raisins (optional)
- 2 Tbsp chopped crystallised ginger
Instructions
- Mash the bananas with a fork or blend them in a small blender.
- Add the other ingredients and combine until you get a malleable dough (you might need to add more oats). Let the mixture rest until the oven warms up.
- Turn the oven temperature to 180Β°C and line a baking tray with parchment paper.
- Make 8 medium or 10 small equal sized balls from the mixture and flatten these slightly between your palms.
- Put the cookies on the prepared baking tray, then bake in the preheated oven for about 10-15 minutes until golden brown.
- Cool the cookies on wire rack then transfer them to a jar or cake tin.
