Ginger Spinach Stir Fry

Background
This Ginger Spinach Stir Fry is really quick to do and tastes great! It's best as a side dish to a full Chinese meal - so you'll probably already have the wok out and ready to go.
Ingredients
- 1 Tbsp peanut (groundnut) oil
- 1 Tbsp olive oil
- 3 cm finger fresh ginger (finely chopped)
- ΒΌ tsp salt
- 750g fresh spinach (washed)
- 1 tsp sugar
- Β½ tsp freshly ground black pepper
Instructions
- Heat the wok over a high heat and add the oils.
- When it's just smoking add the ginger & salt and quickly stir-fry for a few seconds until crispy.
- Add the spinach and give it a good stir for a couple of minutes to mix with the ginger.
- When it's reduced to about β , stir in the sugar & pepper. Keep stir-frying for another 3 or 4 minutes.
- Put into a colander, shake off any surplus liquid then serve in a warm bowl.
