Gluten-free apple and walnut pancakes

Background
Serve these gluten-free apple and walnut pancakes with honey or maple syrup and toasted walnuts. I used oat milk so they are dairy-free too, but feel free to make them with normal milk.
Ingredients
- 1,5 cup gluten-free flour
- 1 tsp baking powder
- 1 tsp cinnamon
- Β½ cup walnuts
- 1 green apple
- 1 cup oat or normal milk
- 2 eggs
- 2 Tbsp unrefined cane sugar
Instructions
- Peel and grate the apple.
- Put everything in a blender, then process until smooth. Add the grated apple and 1 tsp of cooking oil, then whiz for a couple of seconds until you get a thick batter.
- Oil a pancake pan or a heavy based frying pan, then put it on the stove over medium heat. When hot, spoon the batter into the pan, creating circular shapes. Alternatively use silicon pancake mould.
- When the top of the pancakes are solid, flip them over and cook for another minute or so. Transfer them onto a plate.
- Make more pancakes, using up all the batter.
- Serve the pancakes warm with some honey or maple syrup drizzled on top.
