Gluten-free elderflower and lemon pancakes

I love the elderflower season, when my home-made elderflower cordial can really jazz up everyday foods. These gluten-free elderflower and lemon pancakes are truly delicious -Β the family gobbled them up in no time! These pancakes are also pretty healthy! They're gluten-free & dairy-free and, if made with my new easy elderflower cordial, can be sugar-free too. Serve them with some cordial or Acacia honey drizzled on top.
Ingredients
- 1 cup gluten-free flour
- Zest of 1 lemon
- Β½ tsp baking powder
- Β½ cup almond milk
- 1 egg
- 2 Tbsp good quality elderflower cordial
Instructions
- Whisk the ingredients together in a bowl until you get a smooth mixture.
- Lightly oil and heat a pancake pan. Add dollops of the batter, letting them spread out into circles. Cook for a minute or so over medium heat, until the surface is moon-like, then flip them over. Cook for about 30 seconds, then transfer them to a plate.
- Repeat with the remaining batter.
- Serve the pancakes at room temperature.
