Gluten-free vegan apricot cookies

Background
These gluten-free vegan apricot cookies are super healthy! They hardly have any sugar and fat, yet full of fibre and other nutrients. Ideal for breakfast or snacking during the day.
Ingredients
- 2 ripe bananas
- 1 cup gluten-free porridge oats
- 1 cup gluten-free self-raising flour
- Β½ teaspoon cinnamon powder, optional
- Β½ cup oat milk
- 2 Tbsps groundnut or sunflower oil
- Β½ cup chopped apricots
- 1/2 cup of chopped nuts, optional
Instructions
- Preheat the oven 180Β°CelsiusΒ°C.
- Line a baking sheet with parchment paper.
- Mash the bananas with a fork, then add the milk and the porridge oats. If time allows, rest for 10 minutes.
- Add the cinnamon powder, oil and flour, then combine well.
- Fold in the chopped apricots and nuts, if used. You should get a thick, sticky mixture. Add dollops of the mixture onto the baking sheet and flatten them slightly with the back of the spoon.
- Bake in the oven for about 20 minutes until golden. Transfer them to a wire-rack to cool.
