Gnocchi and Edamame in Sweet Potato Sauce

This gnocchi and edamame in sweet potato sauce is a quick, healthy and satisfying meal that’s perfect for busy weeknights. Packed with plant protein and fibre, it’s a vibrant dish featuring soft gnocchi, tender edamame beans and a rich homemade sweet potato and tomato sauce infused with herbs and a touch of spice. The sauce can be made in advance and stored in the fridge or freezer, so all you need to do is cook the gnocchi and assemble the dish, which only takes a few minutes. Use regular or gluten-free gnocchi to suit your needs, and serve with a fresh green salad for a complete, nourishing meal.
Ingredients
- 300g gnocchi (gluten-free if needed)
- 1 cup edamame beans (fresh or frozen)
- For the tomato sauce:
- 1 celery stick, finely chopped
- 1 onion, finely chopped
- 1 carrot, finely chopped
- 2 garlic cloves, minced
- 1 small sweet potato, diced
- ½ red pepper, diced
- 1 tsp dried oregano or marjoram
- 1 small fresh chilli or ½ tsp dried chilli flakes
- 1 Tbsp tomato purée
- 1 tin (400 g) plum tomatoes
- Small handful fresh parsley or coriander, chopped
- Olive oil
Instructions
- Heat a little olive oil in a pan and gently sauté the celery, onion, carrot, garlic, sweet potato, and red pepper for about 8 minutes, until softened.
- Add the oregano, chilli and tomato purée. Stir for 1 minute.
- Pour in the tinned tomatoes and then use the empty tin to add enough water to fully cover the vegetables.
- Simmer for 20 minutes, then remove from the heat and stir in the fresh herbs.
- Blend with a stick blender until smooth and thick.
- Set aside half the sauce for another meal (it freezes well).
- Bring a pan of salted water to the boil and cook the gnocchi according to packet instructions (usually 3 minutes, until they float).
- Lift the gnocchi out with a slotted spoon directly into the pan of tomato sauce.
- Reheat the gnocchi cooking water and blanch the edamame beans for 5 minutes.
- Add the edamame to the gnocchi and sauce, stir well, and reheat gently if needed.
- Serve immediately, with extra herbs on top if you like.
