Gnocchi with pesto and wild rocket
Background
This zesty Gnocchi with pesto and wild rocket is perfect on busy days as a quick meal. It’s ready in just 5 minutes! It’s not only a quick and easy dish, it’s healthy and filling too. You can make it with vegan or normal pesto and feta and gluten-free gnocchi works well too. Also, this is an ideal dish to use up leftover pesto in your fridge.
Ingredients
- 250g gnocchi
- 2 Tbsp pesto (vegan, if needed)
- 2 spring onions, thinly sliced
- ½ lemon, zested
- Freshly ground pepper
- 1 Tbsp chopped fresh herbs ( such as bail, parsley or dill)
- 50g feta or vegan alternative
- 50g wild rocket leaves
Instructions
- Cook the gnocchi according to the packet instruction, then drain.
- Put the cooked gnocchi in a large mixing bowl. Add the pesto, lemon zest, spring onion, plenty of freshly ground pepper and chopped herbs. Toss well.
- Fold in the rocket leaves, then serve with some feta crumbled on top.
