Green pea and avocado spread

Background
This green pea and avocado spread is vegan, healthy, super quick and easy to make. Serve it with toasted sourdough or crostini. Alternatively, you can serve it as a dip with crudites or even as as pasta sauce.
Ingredients
- 1 cup green peas
- 1 small ripe avocado
- 1 clove of garlic, minced
- 1 handful ofΒ fresh mint leaves
- 1 Tbsp apple cider vinegar
- Salt & pepper
- Lemon juice
Instructions
- Blanche the peas in boiling water for 2 minutes, then rinse them immediately under cold water and set aside.
- Cut the avocado in half, remove the stone and scrape out the flesh into a small food processor.
- Add the minced garlic, vinegar and mint leaves.
- Whiz until you get a lightly textured paste. Taste it, then season with salt and pepper to your liking. AddΒ lemon juice, if needed.
- Serve immediately.
