Green pea and rocket soup

Background
This is one of my favourite summer soups. It's nutty and sweet - perfect for revitalizing during late spring, early summer. Serve it with pita or a slice of healthy bread. The soup is also delicious when chilled - perfect for hot days or picnics.
Ingredients
- 1 bunch of spring onion
- 1 large clove of garlic
- 1Β½ tbs olive oil
- 400 ml vegetable stock
- 400g petits pois peas (frozen is fine)
- 100g rocket leaves
- 100 ml Greek yogurt or crème fraiche
- Salt & pepper
Instructions
- Chop the spring onions and garlic into thin slices then sautΓ© them in the oil until tender.
- Pour the stock over it, bring to boil. Add the peas and bring to boil again, then under cover, simmer it gently for 15 minutes.
- Add the rocket, simmer for a couple of minutes, then remove from the stove. Blend. Stir in the yogurt and season to taste.
- Serve warm, garnish with rocket leaves and a dollop of yogurt.
