Background

This is one of my favourite summer soups. It's nutty and sweet - perfect for revitalizing during late spring, early summer. Serve it with pita or a slice of healthy bread. The soup is also delicious when chilled - perfect for hot days or picnics.

Ingredients

1 bunch of spring onion
1 large clove of garlic
1½ tbs olive oil
400 ml vegetable stock
400g petits pois peas (frozen is fine)
100g rocket leaves
100 ml Greek yogurt or crème fraiche
Salt & pepper

Instructions

Chop the spring onions and garlic into thin slices then sauté them in the oil until tender.
Pour the stock over it, bring to boil. Add the peas and bring to boil again, then under cover, simmer it gently for 15 minutes.
Add the rocket, simmer for a couple of minutes, then remove from the stove. Blend. Stir in the yogurt and season to taste.
Serve warm, garnish with rocket leaves and a dollop of yogurt.
