Green pea and sweet potato soup
Background
One of my favourite soups is Green pea and watercress soup which I make a lot during Spring and early Summer. This time I’ve decided to make it with sweet potato, petit pois and rocket & watercress mixture which made the soup even more delicate and delicious ! This green pea and sweet potato soup is vegan, healthy and super easy to make! You can use just watercress or rocket, if you prefer.
Ingredients
- 1 onion
- 1 stick celery
- 1 garlic clove
- 1 Tbsp olive oil
- 1 large sweet potato
- 750 ml vegetable stock
- 500g petit pois
- 150g of watercress and rocket mixture
Instructions
- Finely chop the onion, garlic and celery.
- Heat the olive oil in a saucepan and gently sauté the chopped vegetables. Meanwhile, peel and dice the sweet potato.
- Add the diced sweet potatoes, stir for a minute, then add the stock. Bring to the boil and cook for 10-15 minutes until the potatoes are tender.
- Add the peas and cook for 5 more minutes.
- Turn off the heat and add the watercress and rocket mixture.
- Transfer the soup to a liquidiser, or, using a stick blender, pulse until you get a smooth, frothy soup.
- Serve with a squeeze of lemon or lime juice.
