Background
This green pea spread is a beautiful summer veggie pate that can be served on crostini or fresh baguette. An ideal appetiser or nibble at parties or you can take it with you to a picnic or trip.
Ingredients
- 200g of green peas
- 3 Tbsp olive oil
- 2 Tbsp rice wine vinegar
- 2 Tbsp finely chopped mint leaves
- 2 Tbsp grated Parmesan
- Salt and pepper
Instructions
- Cook the peas in boiling water for 3-5 minutes or steam over hot water. Drain, then immediately pour ice cold water over it to keep its colour.
- Using a food processor, blend the peas, grated cheese, mint, rice vinegar and oil into a textured paste. Leave it a bit lumpy - it shouldn't be too smooth. Season to taste, then mix well.
- Let it rest in the fridge for about 30 minutes.
- Before serving garnish with mint leaves and Parmesan strips.
- Serve it on toasted ciabatta or baguette. Or serve it as a dip with crackers, breadsticks and so on.
Tips
Mix the leftover with some cooked pasta and a drop of its cooking water to make a quick lunch. You can use frozen peas too!© 2024 Copyright CookTogether
