Griddled zucchini & mozzarella salad

Background
This griddled zucchini & mozzarella salad is spiced up with an interesting pistachio & chilli dressing. Perfect for a lazy, summery lunch or brunch.
Ingredients
- 1 buffalo mozzarella
- 1 zucchini (courgette)
- 2 pita breads
- 2 large handfuls of rocket & watercress salad
- 1 Tbsp olive oil
- Dressing: 1 Tbsp olive oil, 1 Tbsp chopped pistachios, 1 tsp white wine vinegar, Β½ teaspoon, Β½ tsp minced garlic, 2 pinches of dried chilli flakes
- salt and pepper
Instructions
- Mix together the dressing and set aside.
- Using a vegetable peeler, slice the courgettes into ribbons. Mix with the oil & seasoning then griddle until slightly charred.
- Toast, grill or griddle the pita until crisp and lightly charred.
- Scatter the salad leaves onto a serving dish. Add the courgette ribbons.
- Drain the mozzarella, tear into rough chunks then add to the salad.
- Cut the bread into wedges and tuck these into the salad too.
- Serve immediately.
