Grilled asparagus with anchovy and Stilton sauce

Background
This grilled asparagus with anchovy and Stilton sauce is a delicate version, so it’s ideal for dinner parties or garden parties. You can serve it as an appetizer with a drink or a starter in a festive menu.
Ingredients
- 1 bunch of asparagus
- 1 Tbsp olive oil
- For the sauce:
- 2 Tbsp crème fraîche or sour cream
- ½ cup crumbled Stilton
- 3 marinated anchovy fillets
- 1 Tbsp chopped dill
- Freshly ground pepper
Instructions
- First make the cheese sauce:
- Finely chop the anchovies. Mix the crème fraîche with the Stilton and anchovies. Season to taste, then stir in the dill and set aside.
- Cut off the woody ends of the asparagus, then rub or brush them with the oil.
- Heat a griddle pan and grill them for about 5 minutes until tender and lightly charred.
- Transfer the asparagus to a plate and drizzle immediately with the cheese sauce.
- Let the cheese melt over the asparagus then serve.
