Background
Grilled, barbecued or griddled asparagus is super-easy to make and can be served with all sorts of interesting sauces. This version is made with a simple combination of soy, butter and grilled lemon juice and served with chilli. It's zingy and delicious - a perfect companion to grilled meat or fish.
Ingredients
- 250g asparagus (green)
- 30g soft butter or margarine
- 1 lemon, halved
- 1 Tbsp soy sauce
- Half a red chilli
Instructions
- Preheat the BBQ, grill or griddle pan.
- Snap off the woody ends of the asparagus, discard these.
- Cook the lemon and asparagus for 5-6 minutes until lightly charred (turning over the asparagus several times).
- Mix the butter with the soy sauce. Slice the chilli into thin rings.
- Put the hot asparagus in a serving dish, spoon over some soy butter, then squeeze the grilled lemon juice over.
- Garnish with the chilli rings.
