Grilled halloumi and peach salad

Background
This yummy, grilled halloumi and peach salad is perfect for a light lunch or supper, particularly on warm days. You can use nectarine or apricots too - in the autumn I like making it with plums. It's ready within just 10 minutes!
Ingredients
- 2 handfuls of mixed green salad
- Few pieces of mint leaf
- 1 Tbsp sesame seeds
- Juice of half a lemon
- 1 Tbsp olive oil
- 4 slices halloumi (1cm thick)
- 2 peaches
- 2 Tbsp honey (approx.)
Instructions
- Cut the peaches in half, remove the stones.
- Dry-fry the sesame seeds in a pan, set aside.
- Barbecue or griddle the cheese slices. Brush the peaches with honey and grill them until soft, whilst brushing with more honey.
- Scatter the salad leaves into a bowl. Add the sesame seeds, mint leaves, olive oil and lemon juice. Toss gently.
- Divide the salad onto two plates and cover each with 2 slices of cheese and 2 pieces of fruit.
- Serve it warm or at room temperature.
